How to Fix / Troubleshooting
Safety first: Unplug the smoker and let it cool before cleaning or moving the sensor.
Corrective actions:
- Clean interior: Remove racks and drip pan. Scrape off heavy grease from walls and ceiling. Built-up grease can retain heat and cause overshoot.
- Check sensor location: Ensure the internal temperature sensor is not touching the element or a rack. It should be in free air. Gently bend or reposition the sensor bracket if needed.
- Verify with external thermometer: Use a separate oven thermometer to confirm actual temperature. If the controller reads much lower than actual, replace the sensor.
- Observe relay behavior: During a heating cycle, listen for the relay clicking on and off. If the element appears to stay on continuously even when above setpoint, the relay may be sticking and the control board should be replaced.
